Preparation :
- Blend all ingredients with a kitchen machine on low speed to a fine paste.
- To prepare a curry, heat cooking oil in a pan, add curry paste and roast for a few minutes. Add coconut milk, the desired meat, kaffirlime leaves, sugar, red chillies and small eggplant.
- Simmer for approximately five minutes and serve with steamed rice.
